Braising, Basting, Baking, On My! 6-week Cooking Series at New Leaf

The semantics of cooking can be confusing. For example:

What is the difference Roasting and Baking?
Is Braising the same as Pot Roasting?
And then there are questions about which cooking technique to use, like:  Should I Steam, Sautée, or Stir-Fry Chard?

Lauren Hoover-West, local Chef and the author of the cookbook, No Wheat, No Dairy, No Problem! will answer all of these questions and much more during her 6-week Healthy Cooking Series that starts on Thursday evening, Sept. 26.

Lauren will give a hands-on class that will teach you how to use basic techniques to cook a broad array of nutrient-dense, delicious dishes from appetizers to desserts using alternatives to gluten, dairy, and refined sugar.

You will also learn how to boost and layer flavors with herbs and spices. Most classes include a wine or beer pairing.

Using what Lauren calls "Farm to Table" cooking techniques, over the 6 week course you will practice using the following techniques to make all these dishes:

Sautéeing:
-Turkey cutlets
-Scallops
-Buffalo Steak
-Zucchini
-Chard

Braising:
-Coq au Vin
-Braised Fish
-Endive
-Stewed Fruit with Port
-Applesauce

Steaming:
-Cauliflower
-Parsnips
-Mussels and Clams

Boiling:
-Artichokes with Garlic Aioli and Balsamic Vinegar

Roasting:
-Broccoli with crispy Garlic
-Rutabaga
-Pot Roast

Baking:
-Moroccan Cornish Game Hen and Herb Stuffed
-Cake with Ganache-decorate
-Pumpkin Pie
-Apple Pie
-Herbed Nuts
-Molten Chocolate Cake

Sauces:
-Volute (for Endive)
-Reduction (for Buffalo Steak)
-Wine and Lemon Pan Sauce (for Scallops)
-Pork Pan Gravy (for Pot Roast)
-Vanilla Ice Cream/Crème Anglaise
-Raspberry Ice Cream

Lauren’s class will be held on Thursday nights from 6 pm – 8:30 pm, Sept. 26 through Oct. 31. It will be held in New Leaf Community Markets’ community classroom in their Westside store, 1101 Fair Ave, Santa Cruz.
